Pho Bo
Ingredients:
2 kg beef bones
1 tbs salt
1 tbs sugar
20cm pce ginger
1 cinnamon stick
3 eshallots
2 star anise
6 coriander roots and stalks
1pkt rice noodles
250g topside steak
1/2 white onion
4 spring onions
1/4 cup chopped coriander leaves
lime
green chill
fish sauce
Method:
char the ginger, cinnamon, eschallots, star anise over a naked flame, then place in a large pot
into the pot place washed beef bones and top with water (at least 5 ltrs)
add coriander roots, salt and sugar to pot
bring to boil and skim scum as it rises to the top
simmer 4-12 hrs (up to you)
strain
cook rice noodles
top with thinly sliced topside beef
top with chopped coriander leaves, white onion and spring onions
pour hot broth over the top (this cooks the beef)
season individually with fish sauce, lime and chill
