Bo Kho

Ingredients:

1kg topside beef (cubed)

1tbs annatto oil

2 stalks lemongrass

1 red chilli

3cm pce ginger

5 red shallots

4 garlic cloves

1tbs 5 spice powder

4 star anise

1/3 tsp cinnamon

5 tomatoes (peeled and chopped)

11/2 tbs fish sauce

1tbs sugar (coconut/palm)

1/2 tsp salt

1ltr water

Method:

  1. combine beef and oil together until evenly coated

  2. pound chilli, ginger, garlic to a paste

  3. fry paste gently until fragrant

  4. add rest of ingredients and simmer 1 1/2 hrs until beef is tender

  5. add 2 large carrots and 3 potatoes (peeled and cubed) cook further 20 mins until veg is tender

  6. garnish with sliced onion and baby mint leaves

  7. serve with fresh baguette
